White House Chefs Featured On "Today" Show

Comerford, Morrison, and Collick in the spotlight for losing 75 pounds...
Executive Chef Cristeta Comerford, Assistant Pastry Chef Susie Morrison, and Assistant Chef Adam Collick were featured in a segment on NBC's Today show on Friday morning, thanks to their collective weight loss of 75 pounds, which they credit to First Lady Michelle Obama's influence with the Let's Move! campaign. All are eating healthier foods and exercising. Comerford, 47, has lost fifteen pounds this year, while Morrison, 44, and Collick, 46, have both lost thirty pounds. The chefs were filmed making healthy veggie sandwiches, and cutting cookie dough--in the shape of First Dog Bo--that will be frozen for the upcoming holiday receptions, when the President and Mrs. Obama will welcome thousands of guests. The chefs said they are getting plenty of support from Mrs. Obama for their health efforts.

"When she sees us, she'll comment 'you look great,'" Morrison said. "I used to comment myself that I was the Cookie Monster, because I love sweets."

"We try to live by her example," Collick said.



The chefs are also eating smaller portions when doing the necessary sampling as they cook the many, many dishes that emerge from the kitchen; the White House hosts hundreds of food-related events each year.

"We have an event going on, I'm tasting all those calories," Comerford said. "What I have tried to do now is taste a little smaller morsel."

Comerford has appeared on Today show before, demonstrating healthy recipes, as has assistant chef Sam Kass.

Though Today reporter Kristin Welker watches the chefs chopping vegetables, the food item she samples onscreen is a cookie. And she finishes the segment by displaying a box of cookies she says she's "snuck" out of the White House to send to New York to the Today show studio.

"I can't promise you that they're low on calories, but I can promise you they're delicious," Welker said.

It's a curious choice for a segment on how much influence the First Lady's national campaign has had. Today also "forgot" to mention during the segment that the story was first reported by the Associated Press earlier this week.

White House Chefs Shed Excess Pounds, Inspired By First Lady Michelle Obama

Longtime kitchen vets change their ways: A collective 75 pounds lost to date...

I was pretty surprised in July when White House Assistant Pastry Chef Susie Morrison first told me she'd lost 29 pounds, because she'd never looked like she was overweight. But apparently Morrison's chefs whites were camouflaging extra baggage; my older photos of her actually do show a big difference. Morrison is 44, and has been at the white House since 1995. She said she made changes to her eating habits and started running, inspired by First Lady Obama's personal habits and the Let's Move! campaign. In October, Morrison said she'd dropped one more pound, and was holding steady at a thirty-pound weight loss. Morrison had just finished giving a healthy cooking demonstration for school officials when she was discussing the vanished pounds. Since 2009, she's participated in many of the First Lady's nutrition education events, and the White House chefs have adopted DC's Harriet Tubman Elementary School as part of the Chefs Move to Schools initiative, so Morrison is literally teaching what Mrs. Obama is preaching.

It's had a personal impact. Over the last year, Morrison has become a devoted runner and just finished a 5K, right after the State Dinner for South Korea. She also bicycles and lifts weights.
Morrison now snacks on fruit instead of pastry scraps, she said, and is in general mindful of her diet. Being a professional sugar master, surrounded all day by cakes, cookies, the legendary White House pie, and loads of other treats, is a dangerous thing for the waistline, but Mrs. Obama's example has changed her ways, Morrison said.

Morrison isn't the only White House chef who has lost weight. A new AP story details other White House kitchen weightloss stories. A collective 75 pounds have been shed by Morrison, Executive Chef Cristeta Comerford, on staff since 1995, and Assistant Chef Adam Collick, a 25-year vet. The chefs work very long hours, and both Comerford and Collick added pounds over the years by tasting their way through thousands of White House menu creations, from the fanciest State Dinners to every day functions.

"We're preparing really good food so it's really very easy to just snack all the time," Comerford said.

Comerford, 47, and Collick, 46, were also caffeine addicts, inhaling loads of extra calories in energy drinks, soda, and for Collick, whipped cream and chocolate syrup-topped coffee. They're now avoiding that, drinking just two cups of coffee per day, plenty of water, and exercising, too. Mrs. Obama is their inspiration, they said.

Comerford has lost fifteen pounds, and said she wanted more stamina to keep up with her 10-year-old daughter, Danielle, a competitive gymnast, and to set an example with "smart food choices." The family sticks to a balanced diet of whole grains, low-fat proteins and plenty of vegetables but on the weekend all "enjoy a hamburger or equally indulgent meal." Comerford's husband is also a chef.

Collick has lost 30 pounds by cutting down on empty-calorie eating, and he limits desserts to a few times a week, he said. He also exercises for an hour most days.

Comerford has now made many TV appearances demonstrating nutritionally balanced meals, and speaking about the wonders of Mrs. Obama's Kitchen Garden, where the chefs get much of the produce that's used in the White House Kitchen. Assistant White House Curator Lydia Tedrick is also included in the AP story; she's lost about 35 pounds in the last year, she said. She joined Weight Watchers and works out with her husband.

Recipe: White House Halloween Cookies

Executive Pastry Chef Bill Yosses' White House Sweet Dough Butter Cookies...
President Obama joked to Jay Leno earlier this week that the White House will get egged on Halloween if more candy isn't included in the treat bags, but the goodies this year for Saturday's early Presidential trick-or-treating contain exactly the same items as in 2010 and 2009, the White House announced. Yes, there's candy: Each cellophane treat bag includes a box of White House M&Ms, a scoop of dried fruit, and a White House Sweet Dough Butter Cookie made by Executive Pastry Chef Bill Yosses and his team. A couple thousand local kids are expected to troop across the pumpkin- and cobweb-laden North Lawn for a stop under the North Portico, where they'll be greeted by the President and First Lady. Each cookie is a mini White House dipped in orange-colored icing. The treats are packed in clear cellophane bags covered with stars and tied with a purple ribbon. The White House released the recipe for the cookies, and a "recipe" for the dried fruit. Each batch of cookies contains--and here's where things get really scary--a pound of sugar and two pounds of butter. The horror! The recipe is very easy, but the dough must be refrigerated over night before it can be used. Check the sidebar for more White House recipes. White House Sweet Dough Butter Cookies

*Dough must be chilled overnight.

*Preheat the oven to 350F.

Ingredients
1 lb Sugar
2 lbs Butter
3 lbs All Purpose Flour
3 Eggs
1 tsp Vanilla
1 tsp Salt

Method
1. Mix the butter and sugar till soft and well beaten.

2. Then add eggs, vanilla, salt and half the flour. Beat on slow speed till mixed, then add the rest of the flour and mix until incorporated.

3. Push flat onto a cookie sheet and refrigerate overnight.

4. The next day, roll dough out to one quarter inch thick, and cut out cookie shapes with cookie cutter.

5. Bake at 350F for 14 minutes and then allow to cool.

Decorate as desired.
Number of cookie servings varies depending on size of cookies cut.

White House Dried Fruit Mix

Mix dried apples, apricots, pears, blueberries, pineapple, papaya, pear, cherries and banana chips together, and serve.

Download This Mini White House Cookbook

Five easy, family friendly recipes, from the White House to Your House...
First Lady Michelle Obama threw a big South Lawn party on Monday to celebrate the success of the HealthierUS School Challenge. All 1,000 guests were given a lovely little book containing five recipes created by the White House chefs. It is now available to the public in digital format, which is a first for the Let's Move! campaign and the White House. Included are recipes for Cauliflower Mac and Cheese; Broccoli Soup; Grilled Chicken Salad with greens; Warm Baked Apples with Dried Cherries, Raisins, and Blueberries; and Fruit and Oat Snack Bars. White House Executive Pastry Chef Bill Yosses and Assistant Pastry Chef Susie Morrison demonstrated the Fruit and Oat Snack bars during Mrs. Obama's party on Monday, to much enthusiasm from the crowd.

White House Chefs Celebrate School Lunch

During First Lady Obama's special Let's Move! party on the South Lawn on Monday celebrating the HealthierUS School Challenge, the White House Kitchen was out in force to celebrate with about 1,000 school officials. White House Executive Pastry Chef Bill Yosses and Pastry Assistant Susie Morrison were in a good mood after demonstrating how to make tasty, healthy snacks; even wine steward Daniel Shanks was celebrating on the South Lawn. At an outdoor prep table, Yosses and Morrison showed the guests how to make Healthy Fruit and Oat Snack Bars, a longtime White House favorite.

"It was a wonderful day," Yosses said.

Mrs. Obama's Let's Move! team, including Senior Policy Advisor for Healthy Food Initiatives Sam Kass, and campaign Executive Director Dr. Judy Palfrey, and members of the President's Council on Fitness, Sports and Nutrition mingled with the guests. Council members inclded co-chair and Olympic gymnastics gold medalist Dominique Dawes and Cornell McClellan, the President and Mrs. Obama's personal trainer. They spoke to guests about the PALA Challenge. The guests were given tours of the Kitchen Garden, still cordoned off from this weekend's Fall Garden Tours.
